Food Design History

I’ve put together both a video and a paper exploring the history of the Food Design discipline, tracing its origins—when, how, and where it became a recognized field.


In the video I delve into the specifics of how and when Food Design emerged. I took on the role of an investigative journalist for a month, conducting in-depth research and uncovering some fascinating, unexpected details.


The accompanying paper, which you can download from my website, lays out a detailed timeline of key milestones that have shaped the growth and development of Food Design. It also highlights the most popular topics of study and discussion within the field.




I felt driven to create this because there’s a lot of confusion surrounding the origins and evolution of Food Design. Many times, I’ve seen articles, student projects, and even theses make claims that, with more thorough research, could have been corrected. So, I decided to do that research.


The article presents an overview of where the Food Design discipline comes from, and the most promising trajectories it is taking. After a look at its history, highlighting how the term first came to be and the first efforts that defined the expansion of this discipline through practitioners and the media internationally, the article discusses what Food Design is and how it can be defined. Then, the article presents a literature review of the field with an overview of the topics that most have attracted the interest and efforts of researcher and practitioners: the concept of food and eating experiences and how Design relates to them, the use of food as an ingredient and a material to design with and some of the most discussed innovations brought to it, Design for agriculture and the emphasis on the role of Design in this first step of the food chain and its effects on all the others, and the role of Design in propositions that affect the food system and important topics like food sovereignty.
